It all has to do with classism. It is seen as vile to eat garlic in any form where it has discernible taste in a dish, since it gives you a terrible breath. Garlic breath is legitimately an indicator for a simpleton, a peasant, a subhuman over in Lombardy. On that note, adding additional ingredients to traditional recipes not only is sullying the divine traditions, but is also similarly a peasant radar.
