How should I cook pork loin? I picked up 5lb pork loin and apparently it sucks to put in a slow cooker

Who told you it sucks to slap in the crockpot? I don't cook with pork loin often, I use pork tenderloin which is a little different but the best pork tenderloin I've ever made came out of a crockpot. Is pork loin really that different?

If it's tenderloin, cook medallions of it. If it's loin, cook it like it's beef filet

Sear on the grill, move it off the flame and close, cook indirectly until it reaches 140, then rest for 10 minutes under rented foil.

I usually marinate in honey mustard and rosemary overnight before.

That could be, when I did my pork tenderloin I had it swimming in marinade and other vegetables that were probably releasing moisture by steaming in there, that could explain the difference.

You can either cut it into chops, roast it whole or pound it flat and make schnitzel or tonkatsu. For everything but schnitzel/katsu you're gonna wanna brine/marinade it and cook it medium, about 135 internal.
