save a bit of tortilla for near the end and wipe the plate clean

I don't think I've ever heard of anybody complaining about egg smell. Hell I don't think they even have a smell.
Try using a different oil (if you're frying), clean your stove or skillet or pan or whatever, open up the window and turn on a fan.
