it's naturally colored, they alter the fermentation of the cocoa fruit to retain some of its natural tint, it's pinkish red during fermenting, and then becomes brown usually. The taste is said to be milk chocolate with some raspberries in the end, some people say strawberries or apples. Very few people have tasted the authentic thing and not imitation, but most people quote some taste that's from a red fruit.

Regular chocolate beans come in the fruit/cherry so they roughly smash that shit and flood it with water and let the whole mess ferment so the pulp seperate nicely from the bean. At this point you've got a slightly acidic fermenting mess that doesn't resemble chocolate. They are all pink because the pH is low from lactic acid bacteria and the membrane on the beans is all loaded with anthocyanins which appear more pink and red at lower pH. Is a lot like tis a lot like coffee.

Regular chocolate floats the pulp and collects the bean which sinks it is then toasted and alkenalised which changes the colour and flavour. Ruby chocolate simply modifies this stage leaving a slightly acidic flavour which mostpeople confuse with fruit.

yeah it's what most people say, they feel skeptical because people associate a very bland chocolate to other flavors of its color. I think it's overhyped white chocolate that may in very fine settings have some extra taste but otherwise is just an alternative to people allergic to food coloring.
