anything aromatic is extremely niche because they expire or lose their scent within like 1 week. they also dont add any textures unless you like slimey leaf texture. in my humble opinion they can be very useful to add color and flavor to a meal that has a bad smell because bad smell legitimately affects your taste but thats all i can see parsley being useful for. it doesnt make already good smelling food taste any better.

Am I the only one who finds that even completely fresh parsley doesn't taste of much at all compared with other herbs? I use it sometimes for freshness and colour, but the taste is not really much.

In my experience, only a few herbs stand up to being dried, stuff like basil, oregano, rosemary, sage...things that have a strong flavor. Parsley, coriander and anything more delicate becomes almost null.

Curly parley has a slight carrot flavour. Flat leaved parsley tastes more like coriander.
