Anyone else GF/DF? Share recipes and favorite foods!

After a few autoimmune issues I've changed my diet a lot and now avoid glutens and dairy most of the time. Made an omelet the other night.

3 eggs
About 1/3 lb ground beef
Third an onion
Dandelion greens
Dumped frank's red hot on top (not pictured)

Since no cheese I let the eggs stay a little runny on top and then fold the omelet in on itself. It just barely sets them and it stays nice and creamy.

I like to do deep fried gf recipes. You can do buttermilk and king Arthur gluten free flour with seasoning, or you can do egg wash, flour, and 4c gf breadcrumbs. It comes out delicious either way. Pic related is my gf Thanksgiving.

I just take the immunosuppressants, so my omelettes come with toast and cheese.

Make it Spanish by mashing and whisking some precooked potato in with the egg before it hits the pan. Russet, Yukon, red, sweet, etc. Keep the heat low so the sugars don't burn before the eggs set.
