I love the combo of avocado with a soft cheese like brie or camembert.
Vego sandwiches are great for loading up with heaps of different flavours. Try the above plus grated carrot, spinach and rocket, red onions, grilled peppers, hommus, cucumber, pepper.
Just fit as much shit on there as you can

i like to slice the tomato into 4 thick discs, place some garlic powder on it or just salt if i already have garlic in the food, and then i stick it in the oven for 10 minutes with some olive oil in the pan, finish it with some mexican cheese mix or parmesan. if you want it to dry it out so that it doesnt make your sandwich soggy you could try cooking it longer

Baguette, buffalo mozzarella cheese, sliced tomato, pesto, and walnuts is a god tier sandwich.

I also like to make vegetarian tuna salad by mashing chickpeas and adding mayonnaise and relish, then putting it on a sandwich with lettuce and tomato.

Also I love egg salad with lettuce and tomato on toasted bread. Egg salad on untoasted bread is gross because you're just biting into squishy.
