What is it with crust and slightly harder parts that makes them taste so good? Bread loaves for example, or pizza, or carrotbox.

Is bread crust the result of the same thing that happens to meat, cheese, etc. when it caramelizes? Because I also enjoy it when those foods are slightly burnt and crispy on the edges.
