Fine if you aren't using a ton of it or have accidentally run out. A block of low-moisture mozzarella is ideal for things like pizza or italian dishes where you need smooth melting.

The biggest criticism I hear about pre-shredded cheese is that it's covered in some kind of starch to prevent it from sticking to itself in the packaging, and that said starch is what causes an unsatisfactory texture when melted. If that starch is the only issue with the cheese, can't you just wash it off before using it?

preservative coating is added to all cheese, and since it's shredded, it creates a larger volume of the preservative. so if you have a good grater, you should buy the block instead if you want it to taste authentic as possible. i dunno if washing it off would get rid of all of it, but personally i think its fun to use a grater anyway.

I guess I would if I had to do a ton of cheese, I guess. I've got a food processor and the wheel for shredding but it takes like 2 minutes to grate a whole block of cheese, it'd be more work to wash the thing unless I'm doing a ton of cheese.
