Roast for a short period of time in a bit of oil to caramelize the skin with salt and pepper. Then slow cook in broth.
You can discard the head after or be a goblin like me and fry it with a bit of honey or syrup to make the skin crisp and pick all the meat off of it, then crack open the skull and eat the brain

I wouldn't eat mammal brains but bird brains are totally safe. Especially when you know it comes from a healthy animal.

Brain varies from individual to individual. It's not my favorite part but I eat it out of principal (I am a strong believer in nose to tail eating) Some brains are more mild and others stronger. The strong flavored ones have an eggy, almost fishy flavor.

My first experience with brain was very bad. So if you're going to ever try brain, make sure you get it from a good source and well prepared.
