A subset of people have a very strong negative reaction to bitter, strong enough to activate their gag reflex (I'm one of them)
It's been posited this is a built in poison detector useful for hunter gatherer tribes because most poisons have a bitter taste (don't eat the stuff randy spits out, it's bad for you), but that's just a guess

I wouldn't describe wine as bitter, unless there is something wrong with it. Wine can be savory, earthy, herbal, vegetal, oaky, smoky, meaty, floral..... Lots of secondary/tertiary flavors that the average person wont like but it definitely isnt bitter.
