You think it's made from scratch? All marinades come in packets and tubs. I'd know as much about the recipes as you do. The chickens come in packets pre-butterflied and marinaded. You take them out, stretch all limbs, put in the prep oven for an hour and then they're kept in warming trays beneath the grill. When it's ordered you put it on the grill, baste it in lemon and herb on the underside, flip it then baste with the ordered basting, flip it again baste once more the requested basting then chop it and serve it.
