The flavor is very rich, it's a very sweet and juicy fruit, you feel like it's melting in your mouth, you can make persimmon jam, but I don't really know of other applications, there are two types persimmons fuyu which is a round type of persimmon, it's the non astringent version, so you can it the skin without problem, then there's the hachiya persimmon, which is the astringent one, you can cut up the top and then eat the inside with a spoon, eating the skin won't kill, however it will dry your mouth as a motherfucker, also, you have to eat this one overly ripe, like, in the brink of rotting, when the skin is all soft, otherwise it wilm be overly astringent and not sweet enough.

Get a citrus reamer - most premade juices will have a kind of sour flavor. They're very cheap and it is a lot quicker than it seems. I'd recommend ceramic. Additionally, try adding just a tiny bit of salt, as it draws out the sweetness.
