processed foods get a bad rap, but what's not to love about a food that doesn't depend on its original form?

if you want every french fry to be identical, then you need to cut from the center of the potato and discard the edges, and every potato needs to meet a minimum length. with tater tots, there is no such requirement. you get to use more of the potato.

you may not like it, but tater tots are peak performance.

The main downside to proper fries is that they're TOO good, it's way too easy to eat an entire large russet in fry form and still want much more. That doesn't happen with any form of baked potato

Interesting. Not sure what that would really do, even my amateur-ass fries in a tiny pot being stingy with the oil ended up being as good or better than most restaurant fries. Made me wonder what the fuck some places are doing.

I've had some really great "seasoned" fries at a korean fried chicken place that were covered in some kind of flaky spicy batter(?) though, not sure how to go about replicating that.
