The downsides are pretty significant if you consider that a normal plant is largely fine with space, sunlight and water. Hydroponics require plastics, metals and electricity.

There’s not. Even if you build one, you’re getting extremely complex and this has to be incorporated into the entire process, at this point god forbid any minor hitch in the system as we would be building a massively expensive deck of cards. Indoor hydroponic growing is absolutely backwards and impractical. We should ideally be moving towards a small scale permacultural system of land use. This means working with nature and taking advantage of the free resources it provides. Most importantly free solar power, free minerals and free water.
When you grow indoors you have to pay for all of those things. Why in God's name would anyone want to pay for artificial sunlight when the sun is giving it away? Why would you want to supplement your plant's nutrients with synthetic additives instead of cultivate soil bacteria that will harness the already available inorganic compounds present in every square inch of soil on this plant? I mean, we all know that taking a multivitamin does not deliver the full spectrum of micronutrients a plant does (as in a carrot contains more than just "vitamin A/beta carotene") and the minerals inside of plants are more bioavailable than if a human were to take a vitamin supplement, the exact same principle applies to giving soil or in the case of hydroponics- water, a synthetic fertilizer rather than proper biologicals.

The idea of indoor growing is so backwards and unsustainable. I'm sure everyone will figure it out eventually. For now I'm just happy to be my own boss and farm diverse fruits and vegetables on a small acreage.

Farming could actually be more automated than it is currently. The reason why it's not is because that automation comes at a high cost in startup expenses and labor. We already have GPS/LPS guided tilling, furrowing, planting, irrigation, fertilizing, and harvesting capability requiring zero human interaction during operation. The reason why they're not more widespread is that those machines cost in the millions of dollars and require extensive setup. Of course, there are crops that need hand harvesting that you cannot automate, but for most grains and a lot of the hardier vegetables we're no where near peak mechanical efficiency. If you're trying to argue that we'll no longer need humans at all in farming you'd be correct, but that'd also be an argument in bad faith. To put it in perspective, Maine's blueberry harvest output increased by 80% between 2005 and 2015 while it's work force for that harvest decreased by 70% due to mechanization.

My mom and I (family farm) make a moderate amount, file taxes as self-employed, save receipts and have a lot of deductions. It's kind of beautifully sustainable. I make a poverty tier amount of money on paper, but eat top tier food and always have bartering objects to trade for things like chicken feed or carpentry work or locally roasted coffee.

The "random crops" need something called FOOD in order to grow. You can't just grow them in a paper towel medium like which is commonly used in vertical farming. You need a proper medium with nutrients. They also have something called ROOTS, their roots get INCREDBLY long and need to be long. This is why you cant grow apple trees in pots unless you are growing some stunted high maintenance bonsai shit.

I grow crops. I grow trees too. Taking away sun, rain, and soil would put me at a massive disadvantage.
