Lol, it was probably made with powdered eggs and bacon rations to begin with. The first mentions of it came from the Americans, then the British papers, claiming the locals made it for them. are you serious? first off that origin has been refuted because there's no evidence at all, and it's impossible to make carbonara with powdered eggs.

second, italians have been cooking eggs, cheese, and meat with pasta forever. carbonara is relatively new but so what? the techniques are classic. and 70 years is long enough for a dish to become a tradition, and long enough for many chefs to have honed the recipe into its ultimate form. im no traditionalist, the technique I mentioned is simply the best method for emulsifying a sauce.
