just bought my first wooden cutting board (acacia). far from anything special I just needed a big ass chopping block style board as my others are just shitty small plastic type material. how do I wash this thing? And is it safe to cut meats on them?

also I thought wooden boards were banned from restaurants but we have wooden boards in the one I work in. I mean we still have the standard blue / yellow / green / red cutting boards that are used on prep but nobody has bat an eye when I cut myself a piece of chicken on the wooden board and just disinfect it. Probably wouldn't do that infront of the health dept obviously

It's a piece of wood, mate. Just wash it with the rest of the dishes and give it a good scrub after you cut meat on it.
Oil it up with some olive oil occassionally.

I have a huge block I use only for cutting vegetables. Keep it constantly on my counter. Whenever I need to wash it, I just wipe it down with the wet paper towel. The not-dirty parts of the towel I use to clean up my counter, just so I feel like I'm not being wasteful.

Don't use olive oil, cooking oils oxidize and turn rancid. Hand wash it in the sink with warm-hot water and a mild detergent (Dawn is fine), dry with paper towels or a kitchen towel after cleaning. Rub with MINERAL OIL; food grade preferably. Don't saturate the entire board in the shit either, just put a small, thin layer all over it.

If you want to go the extra mile and spend the money, boos block cream is bees wax and mineral oil, it'll condition the wood and possibly help fill small cuts and what not too. I'd say grab a giant jug of food grade mineral oil (I'd look into this if I were you, but I'm pretty sure it doesn't spoil or turn rancid, so it should be able to last the years it'll take to use up, or just buy smaller bottles) and a tube of the boos cream; just use the cream every other week or so, it shouldn't be needed too often if you keep the board hydrated with the mineral oil.

Most definitely if you have nice wooden utensils, or even if they're on the cheaper side. I still live with muh 'ma, so I'm more used to really shit wooden utensils (think $1.50 Walmart bamboo cheap) so I wouldn't care for them more than a cursory wiping of oil, definitely wouldn't waste the cream. All wood will dry out, so it's pretty much a given that it you want to keep it nice, you hydrate the wood fibers with oil. If you have nice hand-crafted utensils by all means oil and cream 'em up.

Made some homemade board conditioner. 4 parts food grade mineral oil to 1 part beeswax by weight. Put it in a mixing bowl and heat it up on a stovetop element then added the mineral oil. It’ll incorporate after a little bit as a yellowish oil. Let it cool and then it will congeal into a nice spreadable paste.

Bamboo is naturally antibacterial, that’s true. However it does have grooves so it could hold bits of food like any wood cutting board. You still have to wash it and every now and then oil it up. End grain cutting boards are better and maple > teak > acacia

Teak is pretty much the worst material for cutting boards there is. Not only is it notoriously hard, it is also known for having an extremely high mineral content that dulls edges super quickly.
