Get some fuck baking soda bro, jesus christ and PLEASE just buy some fuckin curry powder.

>but th th the box tastes better hurrrrr

FUCK THAT

FYI golden curry is NOT curry bro, its european gravy but with asia flair.

Japanese curry is not an original cuisine from Japan. It was introduced to Japan during the Meiji era (1868–1912) by the British. During that era, India was under the British colonial rule, and the Britons had widely accepted curry. Curry had been popularized in Japan through improvisation hence a new flavor utterly different from any curries from the South-Asian countries was developed.

Japanese curry has become a staple meal of the Japanese and is enjoyed by people of all ages, but is not inherently nipponcore.

And where the fuck is your roux?
Do you even know what a roux is bro?
OH MY GOD WHAT ARE YOU EVEN DOING OHM FUCKIN SHANTI IS GONNA FUICKIN BLOW HER TOP AND COMEOUT OF THE FUCKIN ADJACENT DIMENSION TO KICK YOUR FUCKIN NEET ASS

Heat 60g of butter over low heat in a pan.
Add the equal amount of wheat flour and stir constantly. Let the butter combine with the flour, and cook over low heat for about 15 minutes until it turns to medium brown, which is the characteristic color of Japanese curry. Keep stirring so that the roux will not stick to the pan. Keep the heat low so that the butter will not turn into smoke and get burn.
Add some chili powder if you want a spicier curry.

But do you not even use salt when you cook the rice?

The other day i made some curry from scratch (mixing the spices, not by using curry powder/bars) and it ended up being great, but the rice felt bland in comparison.
I used koshihikari, cleaned it until water came out mostly clear, then to a pot on high until boil, turned off the fire, put the lid and wait 12 minutes.

Not sure the cooking was the problem.
So i try adding a mix of vinager, sugar and a pinch of salt, and that improved the flavor.

But am i supposed to enjoy the japanese curry using bland rice? Because mixing it with the curry did not improve the flavor, it was like a mix of great flavor with the rice pieces having none.

I'd liken the difference between indian and jap curry to that between a stew or ragout made with roux versus one that only uses a thickening agent at most, like say corn starch. The former just has more body, which is what I prefer in any stew/ragout/curry preparation.
