Depends on the dish but in general unless I'm trying to brown the top of something it's just easier to just plop a lid on and simmer till it's done.

I also almost never sear meat then finish it in the oven with things like steak or pork chops, I cook pretty thick steaks but they're always at least medium rare by the time I get a good crust on both sides so I really don't see the point of finishing in the oven, I'd either be overcooking it or sacrificing the sear for no reason.
