I know you're trolling, and it's not a "pot pie", but earlier this week I experimented with, and today I attempted to refine said experiment, a "shepherd's pie" alteration, mixing the mince with taco seasoning and grated onion+bellpepper (in lieu of onion+carrot+peas), refried beans in lieu of potato, and tomato-con-chile-queso in lieu of condensed cream of celery/mushroom topping. The first attempt came out kinda sloppa, didn't really retain the pielike composition, but it was tasty as all getout, tried to finagle things around this time, it's cooling now while I get dickered on millerlite. but if I can get the consistency right I'd like to cheekily call it "vaquero's pie", and serve it with diced fresh tomato and chopped spinach for contrast.
any suggestions on ideas to improve the recipe also appreciated. mainly the beans-for-potatoes substitution is what got me curious enough to experiment.

We eat many kinds of meat pies in the US, the kind you post simply isn't one of them. Arab Americans have brought Arab meat pies also known as Fatayer, Polish communities have the popular "pasty", and one of the more classic American comfort foods is the Pot Pie, which is extremely similar to what you call a mea pie, main difference being that it's filled with vegetables as well, not simply meat. It's more of a stew filling.

also how do I get into making pies and shit. I'm burger, but always enjoyed "pies" or more like "meat in some kind of bready exterior" other than like a straight up sandwich or breaded and fried

I've had this idea to try make a beef wellington, but with a considerably larger portion of ground meat; like instead of a little steak or whatever, I want half a pound of ground beef inside some kind of pastry wrapper.

how do I go about doing this? what do I buy? I was thinking filo sheets? how long do I bake it? do I fully cook the filling first? or partially and let the baking finish it off? I'm a grown ass man and can cook for myself and shit, but have extremely limited pastry experience, like I don't make cookies or cakes or stuff like that *ever* I've done those things before but like 15-20 years ago in family or literal home-ec class at school contexts.
