if you haven't completely destroyed your hand for an entire week at a time from grabbing the handle of a cast iron pan from a 500 degree oven on a restaurant line you are not a chef. I cannot explain how fucking painful that is. Sure, you pull it out with a towel, but may god have mercy on your soul if you dont plate what's in that pan immediately and forget to grab it with a towel again.

oh yeah you're absolutely right. Similarly one of the prep cooks I used to work with once grabbed the tube you connect to the fryers to let the oil out right after emptying the fryers with his bare hand. Had it bandaged up for weeks must've been real nasty

I've had oil burns, hot pan burns and sugar burns. Sugar burns are by far the worst x100, with oil second and hot metal third.

Its no wonder boiling sugar was used as a weapon in sieges, it would burn your face right off, if it was dumped on top of you.
