15545275 No.15545275 [Reply] [Original]

It arrived today, did my first batch of rice, koshihikari, rinsed and then soaked for 45 minutes until being cooked on the "softer" setting

Rice turned out exactly as I wanted, the consistency of doneness throughout was much better than my previous rice cooker which would regularly scorch the bottom causing the lower areas to be overcooked and hard.

For me at least, this zojirushi was well worth it.

T. Only cooks long grain white rice

Jasmine, basmati, etc are very forgiving rice. Japanese rice (what zojirushi rice cookers are built to cook) is much harder to do prefectly. A rice cooker makes things much easier, and MUCH more consistent.

In Japan the people who make rice without a rice cooker spend literally years learning how to do it properly and even after years of training it won't always come out perfectly, and consistently EVERY batch. Unlike a rice cooker which will give the same results every single time.

Probably heat up like instantly and save half the time, I dont fucking know. Just get a regular one, but even that you're looking at 100 bones at least. Anything lower and you're gambling w/ your emotions.

And always, always get one w/ that weird section w/ the slit on the lid. It prevents condensation pooling, which splash your rice every time you open the lid. Truly the sliced bread of rice cooking.

>> No.15547389

>>15547331
>Probably heat up like instantly and save half the time
It heats up more evenly.

Instead of a resistance coil heater underneath the bowl, it has induction heating elements underneath, and along the sides of the bowl. This allows for a more even heating throughout the entire bowl. Whereas with the electric coil, the bottom heats up first, then the heat moves up the bowl to the top over time.

So induction heating doesn't make it cook any faster, it just makes it more evenly cooked.

If you want FAST rice, buy an instant pot or similar western rice cooker, they will do white rice ~20-25 minutes instead of an hour or longer with a zojirushi.

Made in Japan plus it uses induction heating which means less watt usage than the regular heating element and more consistent evenly spread heat applied to rice bowl. Bought my ex this exact model, used it a few times before giving to her, made pretty good rice. I personally own a Tiger Made in Japan rice cooker, no induction heating, it sometimes slightly browns the rice on the bottom of the bowl, no big deal, but has a steam basket option so is more practical when cooking rice and steaming something at same time.

You don't do elaborate stove cooking but fry up something quick and throw it onto a bowl of rice. Leftover beef? Yum, some sauce and some rice. Yo, this thing is a pressure rice cooker type. It'll cook really fast and really good, for like the first month or so. After that, your standard issues will rear their heads; condensation pooling, yellowing (burnt) rice, etc.

Because it's a pressure cooker hybrid, it doesnt have that condensation trap/reservoir to rid the water. Your rice getting splashed w/ a shot of water every time you open it will become regular occurrence.

Speaking from experience yo

From where? What is holding this “shot of water”?

>>15550701
It has a water trap, man. It drains to the back every time you open it. It's also slower than the zoji. It's 54 minutes for the setting I use - soft glutinous rice. The regular rice setting kinda sucks and is w orse than zoji. Soft glutinous is similar.

Nope, that little cup that's hung on the back doesnt work. I've tried; I put up w/ it for months hoping it'd work as intended but it never did.

Condensation from water vapor in the rice. It condenses and hang on the inner lid as tiny droplets, there until you open the lid and by gravity it drips down. But as it drips down, it coalesces into large drops and eventually just splash all over your fucking rice.

The pressure cooker type cannot have the open reservoir slit condensation collector (idfk what it's called lol) because need to be airtight to pressurize.

Induction heating is the difference between that model and the OP model.

The induction heating more evenly heats throughout the bowl so you end up with more consistent rice doneness.

I believe the mid-range zoji's only have induction elements on the bottom and sides.

The models with induction all the way around it (top, bottom, multiple levels on the sides) are only sold in asia currently, and they're expensive as fuck.

If you gave some random chud a high end zojirushi and a donabe and told them to make rice, guess which is gonna end up better?

Unless you want to spend the next few years learning to perfect your donabe rice, don't bother.

Experience and skill in the use of tools
Experience and knowledge of the quality of rice

"The best rice I've ever cooked."
Even if you think you have cooked the best rice, you will need to make adjustments depending on the variety and moisture content of the rice.
It also depends on the temperature, humidity and water used.

1: Adjust the cooking method using your own experience of rice cooking techniques.
2: Adjusting the cooking method using the technology available in the rice cooker
This is why non-chefs choose a rice cooker.

It is said in Japan that it takes at least three years for a sushi chef to master the art of cooking rice.
This is because it takes time to acquire the skills and experience to make adjustments.
A person with good instincts will only need six months or a year to acquire the technique.
But what happens if you meet year when the rice is not growing well?
That's why the minimum requirement is three years.

"We were only able to buy poor quality rice."
Such excuses are not accepted by customers.
They'll just say, "It's not as good as it used to be.

Bro what now? What kind of rice cookers are you getting that are priced this high? The ones you can find at a nearby Wal-Mart are $30-40 and work very well.

Cooking in a pot becomes easy once you do it a couple of times, but I seriously find that rice cookers provide consistent results with so much room to do whatever you want. Less cleanup work too.

By the way, did you know that brown rice is easier to keep fresh?
The best way to do this is to store the rice in an airtight brown container in a cool place, and then polish it slowly (to reduce heat build-up) before cooking.

There’s a store/website called Toiro, which sells legit Nagatani-en iga-yaki donabe, including their distinctive “kamadosan” rice donabe.
There’s so much knockoff iga-yaki stuff out there that it’s hard to be sure unless you go through a licensed seller like this.
As a general rule, actual iga-yaki won’t be less than $100 unless it’s a super-small piece.
