This is a bit off topic, but how do people in New Orleans bread their shrimp when making a shrimp poorboy?

I've tried using prebreaded shrimp and breading my own, but they are never like the shrimp po-boys I've eaten in New Orleans and many other places that serve them. I have eaten some shrimp po-boys at some places that had shrimp that didn't have much flavor.

All hot sauce does, cholula is overwhelmingly lime/cumin/garlic. If your food needs that much of those you need to spice it more. Lime and garlic are better fresh than from the bottle.
Tabasco is the best choice for beans or stews. Harsh vinegar and dry spiciness to keep itself visible in what you're making. Nothing better for red beans or gumbo. Crystal's my favorite general hot sauce, though.
