Just literally mix all of those in sane proportions. Get the meatball, onion, celery and carrots a blast first in a pan with oil for the flavor, then add a tiny bit of sourcream and cheese ontop. I'd go with milk for the sauce, but tomato also works, then you can add a bit more cheese incase the acid is too strong

This sounds good, maybe put a quick braise on the meatballs first, then add butter and oil. Cook veggies and make a nice sauce.

I'd say put the onions first. Meatballs are already cooked so not much flavor to get out of searing. If you wanna go full fancy you could sear the meatballs, take them out and then do the onions to avoid watering them down

I see you also go to the food drives, OP. Were you lucky enough to get the real cheese this time, vs the stuff with water in it?

my foodbank is awesome
they hand out huge boxes of food to people with no cars.
those people then take the boxes to a table where they unload all the shit they want and theres
tons of vegetarians who leave meat behind
tons of asians who leave the cheese behind

and its mostly just grocery store excess so theres tons of goodies and almost never basic boring stuff all the church drives distribute

Good on ya OP, for enjoying it. How was the wait in line? Did you ever try those pork patties? Something about them always seemed "off" to me, dont know why though.
