I would do the following
- blanche some broccoli rabe
- purée half with olive oil and garlic
- thinly slice the other half
- mix the finished pasta with a bit of both the sliced and puréed rabe
- will give the pasta a green pesto like look but will taste great

Cacio and pepe and an unbalanced dish made on purpose. It leverage and the saltiness of pecorino and the heavy usage of pepper.
It's unbalanced because was originally made to make people drinks more wine.

If you make it right there's no room for anything else, since it have to kinda overpower your tongue
The pic you posted looks bland as fuck, too much pasta respect to pecorino

It can't be elevated you retard. It's perfect as it is. Adding vegetables will just fuck it up. Eat several courses and eat vegetables in the other courses. The great thing with cacio e pepe is you can enjoy the pure combination of just pasta, cheese and pepper. Nothing more is needed.

Brocolli rabe and cherry tomatoes sauteed in olive oil and garlic. really let the tomatoes develop some color, maybe even put them in a dry pan first, then almost deglaze it with the olive oil, add your garlic and brocoli rabe. will present beautifully with the colors of the italian flag and add something healthy and refreshing to the dish.

Are you asking what goes well with cheese and pepper in a pasta dish? Lots of things. It's not the same dish when you're done with it, but chicken goes well with cheese and pepper, tomatoes, most peppers, a lot of brassicas if you don't overdo it. Get nuts and toss some anchovies and pine nuts in there (and then never eat salt again, ever). Do what you want, just be prepared to write 'e' a lot: for instance: "
Spaghetti con cacio e pepe e pomodorini e acciughe e cavolo verde" or call it something that doesn't abuse commas or 'and'.

Of course, after adding the Guanciale it's not Cacio e pepe anymore, that's why it's called Pasta Alla Gricia. OP is asking what you could add to Cacio e Pepe to create an elevated dish in the same way. He's not telling you to still call it Cacio e Pepe afterwards.
