This is the way they do it in modern slaugtherhouses, except using an industrial line with the poultry hanging upside down, they apply an eletric shock directly to the heads to knock the birds down or kill them, depending on the factory. and right after they get shocked there is chopper to cut the head off, much like a steam pumped horizontal guilhotine. After this the chicken bleeds out as the body moves towards the end of the line, where they are dropped into a massive tub of boiling water, removing off the feathers from the meat.
From there it goes down a line of workers that pluck any remaining feathers and gut them to remove the internal organs and either cut the meat into individual pieces or go straight to freezing where they get injected with 10% water and placed under deep refrigeration.

The point of the shock is to make it more humane, in a way.

I prefer my technique of feeding the bird with a dose or two of hard liquor and slicing it's head clean off with a single full swing of a very well sharpened machete. Works every time and the bird does not even move!
