Chop them up, throw them in boiling water for a few seconds and throw in a hot pan with some soy/oyster sauce, some garlic, some ginger and a bit of salt and pepper and whatever spice you got and stir fry it for a while. gochujang or some kind of sriracha goes really well with bok choy.
Goes with any meat really, but stir fried beef or chicken is usually my go to.
