What is “richness” in food? I think I have a vague idea but it really just translates to “fat that tastes good”

yeah that's about it.

Tay? Is that...you?

Rich is intense in flavor and fats or sugar.

desserts can be rich too
it just means each mouthful takes longer to swallow

This. So like normal chocolate brownies might be ok but if you give someone quadruple fudge brownies with chocolate chunks drizzled in chocolate syrup that's when you might say "that's a bit rich for my tastes..."

>fat that tastes good
this, unless you're an american, then this probably does not mean what normal people think it does

Thickened, intensely flavored fatty sauces and consolidated dairy products like cream, butter and cheese

you pretty much nailed it. I would add that richness usually includes a taste that coats your tongue and stimulates the production of saliva

I would qualify fudge in and of itself as being rich

Fat that has lots of sugar in it. Think of a cake that has tons of butter and sugar to make it "rich"

This guy pretty much nailed it but there is also something to be said about richness in other foods. Meat for example or vegetables. Generally when I eat a 'rich' food its something that was prepared by a very good chef and you need less quantity because the quality is so good.

how would you describe mayo?

>> No.15517175

>>15516855
I wouldn't call it rich, because it is mostly oil as opposed to fat.
