Varies a lot. My girl doesn't use much ghee, but she always says that in india the ingredients would drown in it. Personally I tend to cook the indian way because I know they fry everything with one batch of ghee, and since you fry the spices, the oil is the flavor distributor. There's also the factor that when you added the tomatoes, the oil starts to separate on top which is the point at which you add the meat. So it's also a visual indicator for your next cooking step.

Trial and error, in the end it has to taste good

If you deep fry onions for byriani in 25l pots than sure, but for small portions it's either butter or ghee, even on the streets in india. Maybe in the south you'd rather encounter coconut oil because they don't have co farms and traditionally coconut oil is the go to. You get ghee on pretty much every corner in all types of quantities though

I worked for a London borough and I had a friend who was a health inspector and even he said the places are filthy and he’s indian himself. I’m not having a dig at Indian food.
