I want to make instant mac and cheese at home because I live in a country where you can't get it since amerilards add carcinogenic yellow dye to everything.
do you think mixing whey protein, powdered milk and cheese powder would produce a similar result?

They took the dye out here when they reworked the powder and now it tastes like absolute shit. Oddly enough the Great Value version is still decent even though it's made by Kraft too.

I make scratch stovetop mac and cheese a lot, here's what you do. Boil and drain shell pasta, pour back into the pot and turn off the heat, add a few slices of butter, whisk an egg, heavy cream, and seasonings like ground mustard, hot sauce, and pepper together and pour that over the warm pasta, then add a lot of shredded cheddar and american cheese and stir to combine. It has to be done fast so the pasta is still warm enough to melt everything, if you turn the heat back on the eggs will make the sauce too thick and shitty. Obviously you can use whatever cheese you want but more mild ones that can work in baked mac and cheese like monteary and mozzerella will be too bland in this.

yeah. If I were going to add veg to it I'd maybe put in a diced-up bell pepper to add a bit of crunch, get those contrasting textures, but I agree that on the whole you're better off keeping it fairly simple and perhaps having some veggies on the side if desired.
