You'll make moussaka but ratatouille is too complicated? You only have to cut the veggies into chunks and roast them. Moussaka takes ages because you have to make all the vegetable slices, meat and bechamel separately and then still roast it. Takes even longer than lasagne. Ratatouille is easy.
