Less trade routes too. A lot of Europe and Asia had the benefit of ingredients and ideas from elsewhere. A fair fight for Japan would be comparing it to Ireland. Korea isn't all bad.

Oh, congrats, you just picked out two of the most homogenous countries IN THE WORLD!
Basically, countries with heavy trade absorbed much from other cultures. And since both were closed off from trade for many years, their cultural diets have remained very traditional until recently.
Hell, according to most reliable historical sources, Kimchi as we know it doesn't even exist until red pepper trade with the Portuguese.
The same can be said of Japanese Teriyaki or Kobe beef which weren't eaten until the latte 19th to early 20th century after Meiji Restoration and the introduction of Korean BBQ to Japan.
