Post and discuss egg recipes. For me, it’s sunny side up.

If I'm making bacon and egg sandwiches, I fry them sunny side down so they're less messy.

>> No.15478707

I prefer mine blindfolded or poached, but really as long as your yolks aren't hard and overcooked all eggs are good

over easy is where it is at, but just enough to cook the very outer layer and keep a nice fully liquid yolk

The secret to amazing fried egg sandwiches is to coat both sides of the egg with pic related and shove between buttered toast. Its the sodium acetate that works so well with the yolk.. must have liquid yolk.

Also lately i've been frying up sausage patties and adding a cheese slice to it.

real good

You probably do sunny side up because you're too incompetent to flip an egg without breaking it.

Denver omelette, some of you less sophisticated folk may call it a Western omelette

>> No.15478755

Take bacon grease and dump it into bowl and mix with two eggs. Make your omlette and it will be extra yummy.

Warning, if you just put it in the pan with bacon grease it wont mix together well. You gotta whisk it then dump into pan.

>> No.15478766

Its important to only just sear your sunny side up egg just enough to be able to pick it up. Wetter the better.

Blindfolded is when eggs are cooked basically sunny side up, and then hot grease is poured on top to cook the top portion. I've heard it called basted before.

Whisk some eggs and whatever other shit into a bowl, throw em in a microwave-safe bowl, nuke for like half a minute, mix your favorite cheese in with the runny eggs, then cook further in the microwave until you hit your desired consistency.

I cook for a living and usually try to stay away from the microwave, but this I kept this trashy holdover from my latchkey youth. I love how the pillowy microwaved eggs hold the strands of gooey cheese. A bit of ketchup, kaymak, hot sauce, hollandaise, or whatever on top, and you're looking at a good time

Hope you like it, just make sure you play with the time for a bit because every microwave is different. For instance, you might have to eyeball it instead of waiting 30 seconds, but all in all it's a super quick cook especially for how good it comes out

Ever since that egg stall webm guy I've been doing cup omelets. Take a red solo cup, fill it with 2 cracked eggs, a handful of cheese, a little chopped onion, and green pepper, and ham. Whisk/stir the contents together, and poor out onto a hot, buttered frying pan on med heat. Take a slice of white American cheese, and cut in half, place both slices on one side of the egg concoction saucer in the frying pan. Once the egg pancake has cooked to firmness on the bottom, take a spatula, and fold the bitch like an omelette, making sure to cover the American cheese slice. Let the bottom get a nice brown sear while the contents continue to melt for another good 3 minutes or so. You can take this time to either microwave some bacon, or sprinkle a little more cheese on top for melting. If you had some foresight, you could even fry the bacon in the pan prior, and use the grease for the omelet. For seasoning I sprinkle the omelet with a Cajun spice blend, pic related. Tabasco sauce is nice to dip the omelet concoction in too.

>> No.15480693

>>15480674
Oh, also utilize a clear pot lid to sort let the heat stick around, and circulate around the omelet/egg pancake. This helps it cook more evenly, without having to burn your bottom portion.
