Recently got my hands on a dehydrator. I want to make beef jerky, but before i start want your (EXPERT)) input on what cut of beef i should use. What would you guys recommend?

All I remember is your beef should be super lean. Look for one of those cuts that is all red, no white fat. You want like 99% lean here, meat that would be absolutely shitty if grilled.

You want extremely lean beef. So top round, bottom round, eye round, possibly flank, and possibly sirloin tip. How its sliced is very important.

You better post some fucking pictures, asshole, once youre done.
Go for top/bottom/eye round.
Freeze for 30min, so you can cut into thin strips, then marinade overnight.

Don't use any thick sauces for your marinade, it fucks up the final product. If you use liquid sauces, stick to those with the consistency of water(liquid smoke, worchestire, hot sauce), or water with solids in it (siracha, chili paste)

The one thing about beefy jerk you're gonna here from everyone is that you actually can have fat on it and it's delicious. It just doesn't store very long like lean meat, which is why no commercial brands have fat on them

You want something very lean and cheap. Eye of Round is my go to.

Brisket is good too. I usually have my butcher slice it across the grain at 1/4 inch.

After that I do a simple soy sauce marinate over night and just dehydrate it until it's good.
