This world is fucked. I've never had a good batch of waffle fries, but I love perfectly cooked wedges. Also most fast food fries (McDonald's especially) are only good straight from the fryer, and become stale and disgusting in a matter on minutes.

I've been thinking of making my own "crisps" like these, but I'm not sure if I should prepare the potatoes beforehand somehow. I'm supposed to fry them when they're raw, right? Maybe I'm confused, because I heard somewhere that you'd need to boil the potatoes firsthand, but don't they mush easily lile that? It sounds really silly to boil them unless you're using some really dense potatoes, I would assume that they'd become rubbery, if they don't fall apart completely.

it is important that the exterior of the fry has a rough semi porous starch coating prior to frying so it gets that pefect level of crisp and oil retention without being soggy.

Soaking fries properly can achieve this but some places goes as far as putting their fries in an ultrasonic cleaner to pit the surface with micro holes.
