Hey co/ck/s

My uncle shot 2 deer this year and had them butchered and made into, among other things, summer sausage. He gave me 3 pounds of the stuff. What the hell am I supposed to do with it? I already had some with cheese and crackers but got tired of that

Do you guys have any suggestions on how to make use of it?

Good on you OP. Id recommend making a charcuterie board with it. Some crackers, cheese, fruit and a brined veg like cornichons (maybe a preserve on the side) and go to town!

It’s literally as easy as putting in a sealed container and refrigerating it. Also, if it gets moldy really fast, chances are it wasn’t made very well or stored very well.

Generally grocers have it in a vacuum sealed plastic to avoid mold exposure. There’s mold on our skin. The second you open it, it’s exposed. That’s why storing it somewhere cold is important, it slows down the growth to negligible rates.

You could try partially slicing it, filling with onion slices, tomato slices and cheese, and then baking it a while. That's very good with some sorts of sausage (such as Swedish Falukorv), and maybe your kind too.
Or you could slice it up into stew; various recipes possible there.
It might be good if chopped up and fried with potato and bacon and stuff like that.

Maybe you like the cupped shape the meat gets when fried, but if you want to avoid that and get the meat evenly crisped, cut slits in it like pic related. Delis will often do this for you with things like mortadella. It keeps the meat flat.

Slice it and fry up the slices with your breakfast eggs and hash browns.
Since it works well with eggs and potatoes, mountain man breakfast casserole is a possibility.
Fried slices on a biscuit (think fried bologna sandwich) are good.
Make chunks and simmer in bean soup.
Thin slices perk up a grilled cheese sandwich, but you'll have trouble slicing thin enough without a deli slicer. You might be able to make thin strips with a vegetable peeler, but it's finicky.
Chunks in a sauce for pasta are iffy. Brown them first, then simmer in the tomato sauce before finishing the pasta in the sauce. Ziti or rigatoni; do NOT overcook the pasta.


You could mince and mix with mayo, like ham salad or bologna salad, but that's a waste. Only consider this if you despise the texture or are desperate for variety.
