I've actually got a 100+ year old cookbook and it has conversion tables in it but at the same time recipes say stuff like "make béarnaise" or "serve with hollandaise" and the book doesn't have the recipes for most french sauces. it's funny that there's a conversion table but they expect people to already know the basics.
