You can taste spoiled milk, I hadn't realised my fridge was busted and took a sip from a bottle and was very off.
I think many of the best before dates are referring to the most vulnurable people like pregnant women and immunodeficient. Are you pregnant? If not you should be okay. You'd probably be ok even if you were

the date on milk isn't an expiration date, it's a best before date. stores will toss it when it hits the date but i've had milk still be fine over a week past the best before

I've been converting my old milk into fresh cheese and whey for making bread. It make a spreadable cream cheese if you salt the cheese and add a splash of heavy cream to make it creamy and spreadable and then let it set up overnight in the fridge.

Haha, this reminds me of the time that I left an unopened gallon of milk on my kitchen counter for like, it might have been at least 3 months (long story) and I woke up one morning to this just, absolutely like, the worst smell I've ever... smelled.
