For frying I've used gf flour/egg/gf crumbs coating and it worked just fine, my only complaint is that the process is messy but that has nothing to do with gluten or not.

For chicken, I like simple weeb fried chicken (karaage) where you just marinate bite-size thigh pieces and dip in potato starch. Really simple, less mess and you only need 1 bowl. If you get the timing and temp right, you get the perfect mix of juicy meat and crisp light coating.

depends on the baked good. there are good recipes for rice flour cake, almond flour cake (try tarta de santiago), potato flour cake, and of course flourless chocolate cake. for bread, i've never actually eaten good gluten free bread, so i dunno. i tried making pie crust using oats once and i didn't wait long enough for them to crisp up in the pre bake and it was pretty bad. i have heard that corn meal is good for pie crust.

Here's my fried chicken recipe
>take chicken thighs and cut twice through the skin to the bone, with your knife perpendicular to the bone
>flip over and cut across the bone, with knife almost parallel to the bone
>rub salt, pepper, garlic powder, smoked paprika, celery salt all over your chicken
>put it in a bag and add a tbs or 2 of hot sauce, then cover the chicken in buttermilk
>marinade up to 24 hours
>add the same spices you put on the chicken to some gf flour (i use king Arthur gf mix)
>coat the chicken in flour and let sit for a minute or 2
>drop in 400 degree oil, 2 thighs per batch
>flip every 2 minutes until it looks like KFC (about 6 -8 minutes)
>Put the chicken on a wire rack and bake at 400f for 40 minutes
Comes out almost exactly like the real thing. I fried a whole bird for Thanksgiving. Pic related
