Why would they neglect this? this shit is expensive but doesn't function very well. Even the cheaper sitram has rolled edges.

I think rolled edges are cheap. You really only see them on thinner, crappier pots. Generous, thick metal doesn't need them for structural integrity. Sharp edges pour and cut off much, much better, too. But you can't do that with thin pots. Next step up would be thick metal with tapered, flared edges–best of both worlds. I am a functional vessel ergonomics expert.

Seconded. I make homemade lube with my kids and if you don't pour super fast, rolled edges just roll the lube down the side of the pot. Sharp edges or nothing.
