I'm convinced that this tastes the exact same to everyone it's just some people like the flavor and say "It doesn't taste like soap" and some people dislike the flavor and say "it tastes like soap"

it does taste like soap. it has this strange taste like it scratches my tongue too. I used to hate it but I bought some cilantro soup ramen and thoroughly enjoyed it. I think corriander seed is a good cooking ingredient too and doesn't taste soapy like fresh leaves do. I can taste nothing but cilantro in pico from some places. I had chipotle years ago and remember having to scrape the pico out of the burrito before I could continue eating it, and the cilantro still dominated the flavor

Not so. Cilantro contains a compound similar in chemical structure to most lye based soaps. Consequently most people from cultures with more than a thousand years of using lye based soaps find cilantro disgusting. Similarly many cultures that don't have a long history of domesticating livestock produce people that develop lactose intolerance after childhood.
