OP here with a quick update. I made pork stir fry and I love the knife. Cutting the carrots, broccoli, onion, bell pepper, and pork loins was such a joy.

I see the difference in the thickness and hardness of the metal. Kiwi knives are thin and soft, need sharpening more often, but aren't much work. I have a Güde knife for comarison. Its Steel is much harder and it takes long to sharpen. Not the knife makes the cook imho.

See these dimples reaching the blade? They are a minor feature of santoku, allowing vegetables you cut to separate smoothly without sticking to the blade - the cut isn't perfectly straight but minimally wavy so there's no big flat surface to stick directly to the blade. It's a minuscule comfort-of-use feature , something mostly everyone can do without, but best chefs can save half a second of time chopping stuff thanks to these.

Now look at your knife. Look where the dimples are relative to the blade. I had the displeasure of using such a knife to chop potatoes. The effect of these dimples is reverse - they act as suction cups. The piece of potato sticks to the knife HARD. And I mean it, it's not just "flick it off" or "apply some pressure". I spent like a minute struggling to get that fucking half of potato off the knife, it was like superglued. With the force I had to apply to pry it off it was an accident waiting to happen.
