I'm thinking about starting an event food stand after quarantine ends. I want to market to people with the top 8 allergies. The way I'll do it is by selling only chicken, potatoes, and rice. I would marinade and BBQ the dark meat southern style, and do a Cuban chicken breast marinade. I would sell rosemary taters and chicken stock rice for sides. Do you think this would work?
