Texture is way different. Scrapple is more like scrap meat mush, mixed with starch(typically cornmeal and flour) so it has a softer texture.

As disgusting as it sounds, though, all that starch lends to crisping up really well, so pan fried(or if you're feeling particularly gluttonous, deep-fried) scrapple is the shit. It's sort of like a meaty croquette when fried, crispy outside, soft interior.
