Ok lads, I bought some tiny fishes, and defrosted them, then salted them for a day, and now I’m going to pressure cook them in some pasata. My goal is to cook them enough that the bones are soft and edible like canned fish. Will this even work? How long should I pressure cook for? I set it to 240 minutes which is as high as my machine goes, but maybe this is too long? Maybe not long enough? How to make soft bones?

Here’s after 2 hours in the pressure cooker. They are softer now, and fall apart like a canned sardine, not a fan of the flavour or texture. The fish is dry and takes a lot of chewing, more than to eat a sardine. And some of the bones have still not fully softened, in one bite I got a bone stabbing the roof of my mouth.
Granted these weren’t actually sardines but some other little fish I found, since I can’t find actual sardines. Maybe that would make a difference. Also these stink. A lot!

Ok so I did some googling and apparently my problem was that this pressure cooker is a standard instant pot model and it is only 9 psi and I need 15 to 20 psi of a pressure canner to get the softened bones effect.

I’m reading now about modifying an instant pot, you can solder in an extra POT to adjust the total resistance of the variable resister, effectively raising the target temperature of pressure cook mode.

TLDR; I’m going to modify my instant pot in a quest to make home made deens.

If you are still here, I would recommend the following. Get some nice crusty bread, toast it. Rub it very generously with a clove of garlic. Add a leaf or 2 of lettuce, sliced tomato (remember to add salt and pepper), and some thinly sliced red onion or shallots. You could also chop up some fresh garlic too. Add your sardines. Simple and very delicious lunch.
