Got lazy so its just oysters for dinner
Testing out which ones I was gonna serve at the new years party, but thats canceled due to coof

Actually tried one with tqbasco for the first time tonight, its nice, less overpowering then I feard, but it definitely has something going for it

I once went out picking oysters on the west coast of Sweden. I tried to bring as many different kinds of toppings for them as I could. I probably ate between 20 or 30 oysters that day. But anyway here's what I tried and I'll rank it in order of preference (best at the top):

> tabasco
> soy sauce
> lemon
> horseradish shavings (though they do work really well with the soy sauce)

Also putting them on a grill and letting them cook in garlic butter is just heavenly.

I love oysters. I like to do them in the style of my local sushi place, with lemon or lime squeezed on top, a dash of ponzu/soy, green onions, and a small dab of sriracha. A little masago if you have it. Yum. I'm also pretty into the classic mignonette. I enjoy cilantro with them as well.

We have great oysters over here on the west coast, and there's a place famous for serving with a really delicious vinegar sauce.

Give it a try if you can find the ingredients,
1/4 cup seasoned rice vinegar
1/4 cup unseasoned rice vinegar

I like pic related on my oysters. I usually eat them once a month, pick up a box shuck em all, and have various sauces and fry some up.
I also like Saki or rice wine vinegar mixed with mushroom consomme and chopped green onions. I make up random shit to put on my oysters all the time, but the Susie's hot sauce is the best.

Oysters are great. I’ve got an obscure mignonette recipe that not everyone’s cup of tea but give it a shot. Recipe isn’t accurate but figure it out.

Pick a bunch of tarragon and keep the stems, simmer the stems in about a cup of white wine vinegar until reduced by half, strain. Mix tarragon vinegar with about a cup of ketchup add 4 diced shallots, chopped tarragon, chives, pepper and a touch of salt. To taste it should be sour, sweet and absolutely light up your mouth from the floral tarragon. Enjoy with oysters obv.

My grandparents held the party and are savants when it comes to preparing and cooking any type of seafood. Since they live in NJ by the shore, they have connections, my grandfather especially since he served in the navy and knows basically the most of the ports near all along the coast of Jersey. That aside, he has someone for his seafood who ALWAYS comes through with top tier ingredients and catch’s that you’d find served at like Michelin star restaurants. Without dragging on any further, guy fucked up, my grandfather fucked up since he can usually smell if it’s a bad batch, and seeing 5 people battle for 2 toilets is it’s own saga.

I tried oysters once. I had some fried oysters for dinner with friends. I woke up in the middle of the night and had the strongest vomit and diarrhea session since I was sick with the 24 hour flu. Haven't had them since. I don't know if it's an allergy or I just got the one bad oyster in the pot, but I won't try to find out again.
