The idea of "flyover" doesn't apply to an island nation where you are never more than 70 miles from the sea.
We don't use aeroplanes like buses like you have to, there is nowhere significant to "fly over" when travelling from point A to point B.
Do you just mean shithole places? There are plenty of those here, but they are spread quite evenly across the country in between the nice parts. There are no country-sized regions of worthless skippable garbage like there is in America.

It's comfy picnic food, traveling train food, local public house food, and actually pretty keto friendly.
It's a soft boiled egg mostly now (originally hard boiled, but it's a little chef kudos to somehow cook something twice, or even serve it warm at all, and have soft yolks nowadays).
English sausage (quite a bit different than american breakfast style), taken out of casing, combined with herbs, then hand shaped around the cooked peeled egg, and usually quite thicker and more generous around the egg than the chintzy one pictured. Rolled in coarse seasoned breadcrumbs, then deep fried til sausage is cooked through and breadcrumbs totally browned. Hot mustard on the side.
I love it cold more than hot.

I'd argue that flyover areas can have more concentrated culture than most cities. Modern cities are becoming interchangeable amalgamations of people from all over the world. Backwaters whether they be in rural Romania or Alabama have purer manifestations of culture than most cities.

Im in flyover and the food has changed a lot in the last 20 years. The old lady food is dying out. I remember the old ladies making "salads" which were different combinations of jello and marshmellow. The cooked some weird shit. I was looking through my grandmothers old recipes and mst of it was pretty gross. Ingredients like canned shrimp. I did see an interesting beef stew recipe that was baked and had tapioca
