why does premade chocolate milk from the milk aisle taste so much better than any chocolate milk that you can make at home? it's so rich and creamy and it beats the hell out of nesquik and ovaltine.

something i heard a long time ago but don't know if it's true or not. if you've ever seen the local dairy truck pull up and restock a convenience store, you'll notice they replace the normal milk with new shit and take away the stuff near its expiration date. from what i heard they take that milk back to the plant, re-pasturize it and fill it with chocolate flavoring and sugar. that said the store bought chocolate milk tastes better because the recipe was probably created by someone with a bit more knowledge in creating recipes that are regionally, nationally and globally marketable.

It's often made with whole milk, has a better blend of flavor than just syrup, and generally also uses a thickening agent like carrageenan for the creaminess you describe.

At the milk plant, they literally use a giant blender to mix a sweetener/flavor powder into the milk. It's like Quik/Nesquik.

Mix it yourself in a blender, chill... same thing.

They're fussy about maintaining cold chain, and usually offer full credit for drained empties or expired/close dated product.

Check the label, see it all there.
Stabilizers and thickeners that prevent the cocoa powder from settling on the bottom before being bought, which is unappetizing, and needing shaking.
Extra sugar.
Traces of flavoring that enhance the milk's cream flavor, vanillin and caramel coloring kinds of flavors, not so much that you'd notice them outright, but they're in there!

Ovaltine and Carnational Chocolate malt include that maltiness, which is nice really.

that's not true. chocolate milk is usually 1% milk, meaning it's got less fat than either whole (3.25%) or partly skim (2%). it's equivalent to skim milk (1%).

the reason it tastes so good is because of the stuff that's in it. they put in some chocolate, and tons of sugar. a cup of chocolate milk has about 27 grams of sugar, whereas regular milk has about 12 g of sugar (and only from the lactose).

so in chocolate milk, you're getting a tiny bit of milk chocolate flavor and 15 g of pure sugar in each cup.

Yeah this is why it seems creamier even though it's usually made with low-fat milk. You can thicken milk a bit with corn starch at home, or mix in some heavy cream to make it richer which might taste better.
