>hot summer day
>spend a Saturday tending the garden, mowing the lawn, doing chores, fixing up the house
>go out around 6:00 and pick a few ears of corn
>shuck them and take off the silk
>boil a large pot of water with a couple of healthy pinches of salt and a good pinch of sugar (minus the sugar if you're raising supersweet varieties of corn)
>drop in the ears
>cook for 2-3 minutes or until mostly tender to a toothpick

Hopefully you've already prepared a butter that has salt, black pepper, and some fresh parsley. As soon as the ears are strained and steamed dry, add them to the plate and absolutely slather with your butter. Eat RIGHT THE FUCK NOW and then have a beer while you continue your BBQ and eventually chow down on burgers, dogs, chicken legs, and fresh salads and sides while you watch the sun set.

It's all good, my dude. Boiled and seasoned? Do it. Grilled? Hell yeah. Elotes? You bet your ass, though for me it's a little heavy and distracts from the corn so I don't have them very often.

In-season corn is like in-season tomatoes, you know? You will surprise yourself with how many creative ways you can use them because you know the out-of-season stuff really can't compare.

I'm with you! I usually prefer apples done on a stovetop, but I agree with peaches. Another of my favorites is pineapple. Goes great with a large amount of grilled meats, for salsa with spicy peppers, as a topping for vanilla ice cream, and even for the occasional wacky burger.

I have grilled lemons before, idk why but I just cut one in half and tossed it on to see what would happen. It actually browned/blackened quite nicely, and after I got done eating my chicken I poured maybe 1/2 tbsp honey in the lemon halves and kinda turned them inside out and just took a big bite of the meatiest parts. Sounds retarded(it is), but it tastes pretty nice.

I'm not sure why, but I've never been a fan. Even when it's out a season, if I dump a whole can of decent canned corn into a microwavable dish, bring it up to a hot temperature, strain off the water, add butter and seasoning. I know I have a good side. Green beans are stupid versatile, sprouts have a lot of uses, broccoli has more dishes that it's familiar with than corn, etc. It's almost like we expect corn to be more solo, but at the same time it's one of the most satisfying sides with just a few added flavors. Tabbouleh, an addition to chili or a salad, whatever, you can definitely do more with it. But there's rarely a simpler and more satisfying side than buttered corn with some salt and a good amount of black pepper.

Elote is the shit. but nothing beats fresh peaches and cream corn on the cob bought straight from the back of a pickup truck manned by a bored 14 year old in early august at like 8 am when it's already muggy and hot as fuck. bonus points if they're selling melons and/or heirloom tomatoes.

I will eat it raw. i will eat 6 ears in a row as a meal. i love corn.
