cook a sausage of your choice (I used andouille most recently,) sliced into circles
grated/thinly slice sprouts, slice shallots, dice potatoes
remove browned sausage and cook all vegetables in the grease, along with about a half cup of stock
sautee vegetables on medium heat until potatoes are cooked through and sprouts are thoroughly caramelized, adding the cooked sausage, minced garlic and thyme ~5 minutes before you stop cooking

I enjoy them. My favorite thing to do with them is to shred them up a bit and blanche them just until they brighten up. Then you can make a wonderful salad with some manchego and halved grapes. Add black pepper, shallots, shaved almonds and a light vinagrette.

I do the pan sear but with only maybe a couple teaspoons of oil. I cook them the way one would cook pan fried dumperringh - tiny bit of oil, add enough water to just cover the bottom of the skillet with like 1/4" of water, medium/medium-high heat, and COVER. by the time the water has evaporated the sprout halves will all be steamed beautifully, tender and juicy, and the bottoms will be perfect golden brown. i've tried all different way but it's hard to sear them properly and cook them through evenly any other way. plus the steamfry method makes them much juicer and tender imo
